Celery tonic was a celery flavored tonic. It was introduced in New York via the soda brand Dr. Brown's in 1869.
In 1927, the gangster Arnie "Eggs" Benedict mistakes Doc Brown for Dr. Brown. Doc tells him that he doesn't brew celery tonic anymore, and now brews hooch.
